  • Olive oil: Just enough to help the spices adhere to the chicken.

  • For the crispy potato base:
  • 5–6 medium potatoes: Russet or Yukon Gold work best. Alternatively, use frozen potato for quicker preparation.

  • Potato seasoning: A mix of sea salt and your favorite herb blend.

  • For the “healthy” white sauce:
  • Two cups of low-fat milk: The base for our smooth topping.

  • Three tablespoons of all-purpose flour: This gives the sauce its necessary structure.

  • 1–2 tablespoons light labneh or Greek yogurt: This is the game-changer—it adds creaminess, as well as a boost of probiotics and protein.

  • Preparing the Savory Chicken
    The foundation of this casserole is the chicken. Start by heating a drizzle of olive oil in a large skillet over medium heat. Add the diced chicken breasts. Season them immediately with salt, pepper, paprika, and garlic powder.

    Cover the skillet and allow the chicken to simmer on low heat for 10 to 15 minutes. This method allows the chicken to cook in its own moisture, ensuring that each cube remains tender and succulent. If you prefer a slightly charred texture, you can also cook the chicken in an air fryer at 350°F (180°C) for about 12 minutes until the edges are golden.
  • Healthier Potato Crunch
    Forget deep-frying! Peel and cube your potatoes into small, bite-sized pieces. In a bowl, toss the potatoes with olive oil and your favorite seasonings.

    Transfer the potatoes to the air fryer and cook at 400°F (200°C) for 20–25 minutes. Shake the basket halfway through. This will ensure that each cube is crispy on the outside and soft and fluffy on the inside, providing the perfect base for the casserole
  • Whisking the Velvety Light Sauce
    Traditional béchamel sauce can be heavy, but our version is light and refreshing. In a small saucepan, whisk together the cold milk and flour until smooth.

    Place the pan over medium heat and stir continuously. As the mixture heats up, the flour will thicken the milk into a silky sauce. Once the sauce is thick, remove the pan from the stove. Quickly whisk in the Light Labneh or Greek yogurt until the sauce is completely homogeneous. This adds a tangy flavor that balances the savory chicken perfectly
  • Assembly and the Final Golden Bake

    Now, it’s time to bring everything together in a large, oven-safe dish, such as a 9×13 Pyrex.
